You know how I know this is the best Coconut Cake? It’s not just because it’s the most precious thing I’ve ever put in my mouth, although that is, of course, a huge reason. It’s because this coconut cake was a last-minute delivery from the Recipe Fairy.
Just as I was about to make a different coconut cake recipe that I was not 100% sure of (to take to a dinner party, gasp), and after reading the overly complicated recipe about 45.8 times, I had one more question I wanted answered. And that’s when the Recipe Fairy delivered this coconut cake recipe. It just popped up out of Google nowhere.
And it was perfect. They say there’s no such thing as perfection, but here is, my friend. It exists right here in this coconut cake.
